Irish Potato Bites

  • 20 small red potatoes
  • 1/2 cup corned beef, chopped
  • 1/4 cup cheddar cheese, shredded
  • 1 tbsp. butter, melted
  • 1/3 cup carrots, shredded
  • salt
  • sour cream (optional)

Fill a large pot with water and bring to a boil. Add the potatoes and boil until they are tender. Preheat oven to 400 degrees. After the potatoes have cooled, cut each one in half. Then cut a small slice off the rounded end of each half so the potatoes can sit up. Scoop out the inside of each potato into a bowl. Now add the carrots, cheese, corned beef, and butter to the bowl full of the potato insides you already scooped out. Thoroughly mix all the ingredients together, adding salt to taste. Also, sprinkle some salt over the potato halves. Scoop the mixture into the potato halves and then place them on a baking sheet. Place the baking sheet in the oven for ten minutes. Remove from the oven and serve with a dollop of sour cream and enjoy!
