Spicy Turkey Chili

Ingredients

  • 1 1/2 lb. lean ground turkey (chopped beef can be substituted)
  • 3 cans (1 lb. 13 oz. each) red kidney beans
  • 3 or 4 red bell peppers, chopped into 1/2 inch squares
  • 1 large Vidalia onion, chopped
  • 2 or 3 jalapeño peppers, seeded and chopped (optional; use more or less to your liking)
  • 1/2 tsp. red pepper flakes (optional)
  • 1 tsp. salt
  • 1/4 cup cumin (use more if desired)
  • 1/4 cup chili powder (use more if desired)
  • 2 TBS olive oil
  • 8 oz. seasoned tomato sauce
  • 2 tomatoes, seeded and diced
  • Sour cream
  • Shredded cheddar

Instructions

Sauté ground turkey until no longer pink, drain and place in 8 quart pot. Sauté red peppers, jalapeño peppers and onions and stir into ground turkey. Add the remaining ingredients and cook about half hour to 45 minutes. When serving sprinkle with shredded cheddar and a dollop of sour cream.
