Zucchini and Tomato with Herbs

Ingredients

  • 1/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp. olive oil
  • 4 cups zucchini, peeled and sliced (about 1 3/4 lbs.)
  • 1 bay leaf
  • 1 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/3 cup chicken broth (low sodium)
  • 2 cups tomatoes, unpeeled and chopped

Instructions

Heat olive oil in a skillet, over medium-high heat saute onion and garlic, stirring constantly until tender. Stir in zucchini and rest of ingredients except tomatoes. Cover and cook over medium heat about 10 minutes. Stir in chopped tomaotes and cook 5 minutes. Remove and discard bay leaf before serving.
