Halibut Filets with Paradise Green Sauce
  • 2 six ounce Halibut Filets
  • 1/4 cup melted butter
  • 1/4 cup dry white wine
Paradise Green Sauce
  • 1/2 cup celery, chopped
  • 1/4 cup green pepper, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup watercress
  • 1/4 cup dry white wine
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon granulated sugar
  • 2 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon fresh ginger, peeled
  • 1 lime, squeezed for juice
  • 1 lemon, squeezed for juice
  • Garnish with lime crowns and parsley sprigs

 

To prepare Paradise Green Sauce, combine ingredients listed for Paradise Green Sauce in a blender or food processor and puree for 1 to 2 minutes, pausing three times to scrape down the sides of the bowl.

Pour out into small mixing bowl.

Place halibut in a greased baking pan. Cover each piece of halibut with an even coat of Paradise Green Sauce. Add melted butter and white wine to give fish added flavor. Refrigerate at least 3 hours. Bake fish at 375 degrees until a light, golden color starts to form, about 12 to 14 minutes. Remove fish from oven and place on plates. Pour extra sauce from baking pan on top of halibut.

Garnish with lime crowns and parsley sprigs.
