Apple Cider Donut Bread Pudding Recipe

Here’s a fun twist on a classic recipe! And might I add quite delicious! You’ll notice that I’ve included my own tips and comments. Sometimes I find that I need to adapt the recipe to my lifestyle or kitchen. But I like the rules so much that when a recipe asks for a 9×13 baking dish, I’ve been known to get out the tape measurer just to be sure! So I appreciate knowing when I don’t always have to stick EXACTLY to the recipe. Hope you enjoy!

Ingredients
3 large eggs
1/4 teaspoon salt
1 cup sugar
3 cups milk (I used 2 c. 1% and 1 c. half and half for a creamier taste because I didn’t have any whole milk on hand)
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
4 tablespoons butter, melted
2 packs Delicious Orchards apple cider donuts, cubed* see note below[divider scroll_text=””]

Preheat oven to 375 degrees F. Lightly coat medium baking dish or deep-dish pie plate with nonstick cooking spray. I used a 9×13 baking dish. 

In large bowl, whisk eggs and salt until smooth. Whisk in sugar until combined; whisk in milk, vanilla, cinnamon and butter until smooth. Add donuts; mix gently with a spatula to combine. Set aside 10 minutes to soak.  

Transfer donut mixture to prepared baking dish. Bake on rimmed baking sheet 30 to 45 minutes or until set but still slightly moves in center. Let cool slightly. Serve topped with ice cream (optional). Optional?! Should be mandatory! 

*While this recipe calls for 2 packs of donuts, I recommend getting 3. It’s near impossible to make it through baking this recipe without eating a few cubes of the donuts… and well, once you start with one it’s hard to stop. Plus, you know your kids/spouse/friend/neighbor/dog will want a donut, too!
