Peach & Apricot Glaze for Ham

  • 12 oz. frozen peaches
  • 3 cups pineapple juice
  • 1/2 cup Clearbrook Farms Apricot Preserves
  • 1 TBS brown sugar
  • 1 Ham

To cook ham, follow directions on package. For the glaze: In a saucepan over medium heat, combine peaches, pineapple juice and apricot preserves. Stir constantly to avoid burning. As the peaches begin to soften, reduce heat to low and break peaches apart with a spoon continuing to stir. If necessary, mash peaches with a fork. Allow to cook for about 20 minutes or until most of the liquid is gone. Once mixture has reduced to half, turn off heat and stir in brown sugar. Glaze should have a slightly chunky texture. Place in a bowl and set aside to cool. Yields: 1 1/2 cups
