That big football game

It’s time for that big football game again. The one with the good commercials. That game where men & women come together and feast on the most delicious snack foods. You know, that one.

What’s going to be at my game day? Well, I have a list of things that I’m hoping will be there… wings, chips, maybe some mozzarella sticks, and of course the token veggie platter with dip so that I can eat guilt free! But no matter where I end up, I’ll bring some guacamole. It’s a crowd pleaser. And it’s gluten free. 😉

Guacamole. It’s such a classic. And yet, there are so many different ways to make it. Do you like your guac chunky or smooth? Or maybe smooth with chunks. Do you like peppers in it? Spicy? Mild? Onion? And if so, do you use a red or yellow onion? Whatever your style, this avocado based dip that dates back to Aztec culture just makes my stomach happy!DSC_0010

So here’s my regular guacamole recipe. Just a warning that I keep it pretty simple. And I taste my way through it.

  • 1 avocado
  • 1/2 large tomato, diced
  • 1/4 onion, chopped finely
  • The juice of a lime- I prefer fresh, but lime juice from a bottle does the trick!
  • salt & pepper to taste

Slice the avocado down the middle and around the pit. Separate the two halves and get the pit out. Cut in a criss-cross pattern across the flesh of the avocado. Spoon out the chunks. Using a fork, I mash up the avocado to a moderately smooth consistency. (If you’re using many avocados, you can use a potato masher to get the “perfect” consistency!) Then, add the tomato, onion, lime juice, salt & pepper. Mix, serve & enjoy!
