It’s easy to fall into a mid-winter rut for snacks and dinners. Sometimes I just feel like I’m on autopilot, rotating through the same foods every couple days. But trying to include seasonal produce into my meal planning is one way that I can challenge myself to keep things interesting (and healthy!) for the whole household.
Enter: Texas Rio Star Grapefruit.
As its name suggests, this beautiful grapefruit hails from the Lone Star State and has a beautiful red flesh. It’s known for its intense flavor, and when I sliced it in half, it was so aromatic and juicy! (You can see the juice dripping onto the cutting board in the photo!) Seriously amazing.
These grapefruits make a satisfying snack by themselves, but are also great for juicing. Another creative way to use them is in a green salad with a light citrus dressing.
So don’t be afraid to take advantage of citrus season in the winter. Plus, we could all use some extra Vitamin C to battle off all the winter germs! At least, my kiddos and I can use all the help we can get!
