Ingredients
- 1 large Cardoon
- 2 Tbsp butter
- 2 Tbsp flour
- 2 cups milk
- 1/4 cup grated Parmesan
- 1 tsp salt
- Parmesan and Breadcrumbs (For Topping)
Instructions
- Heat and stir butter and flour together. Add milk, parmesan, and salt. Mix together until thickened. Place to the side and let cool.
- Peel Cardoon to remove spiney part. Cut into 3” pieces. Keep in cold water with a little lemon juice to keep from oxidizing.
- Boil water on stove and add Cardoon pieces, let roll boil for 20 minutes or until tender.
- Lay the Cardoon pieces in a roasting or cake pan. Add sauce over top. Sprinkle with Parmesan and breadcrumbs. Bake at 375°F until it browns and sides bubble.
