Cardoon Gratin

Ingredients

  • 1 large Cardoon
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 2 cups milk
  • 1/4 cup grated Parmesan
  • 1 tsp salt
  • Parmesan and Breadcrumbs (For Topping)

Instructions

  1. Heat and stir butter and flour together. Add milk, parmesan, and salt. Mix together until thickened. Place to the side and let cool.
  2. Peel Cardoon to remove spiney part. Cut into 3” pieces. Keep in cold water with a little lemon juice to keep from oxidizing.
  3. Boil water on stove and add Cardoon pieces, let roll boil for 20 minutes or until tender.
  4. Lay the Cardoon pieces in a roasting or cake pan. Add sauce over top. Sprinkle with Parmesan and breadcrumbs. Bake at 375°F until it browns and sides bubble.
