Slow Cooker BBQ Beef Brisket

Ingredients

  • 3 pound brisket
  • 6 kaiser rolls
  • 1 1/2 lbs prepared cole slaw

Spice Rub:

  • 1 tablespoon salt
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon ground mustard
  • ½ teaspoon onion powder

Homemade BBQ Sauce:

  • 1 cup ketchup
  • 3 tablespoons brown sugar
  • 2 tablespoons apple cider or white vinegar
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon Wright’s liquid smoke

Instructions

  1. The night before, mix the spice rub in a small bowl. Rub the spice mix on both sides of the brisket. Cover and refrigerate overnight or 1hr if short on time.
  2. Combine the sauce ingredients in a 2-cup measuring cup or medium bowl. Cover and refrigerate overnight or 1hr.
  3. Just before cooking, place the seasoned brisket fat side up in a 5 or 6 quart slow cooker. Pour the sauce over the brisket.
  4. Cover and cook on low for 10 hours. Brisket is ready when it’s fork tender.
  5. When finished, remove the brisket and let it rest on a cutting board for 15-20 minutes. Shred the brisket into small pieces using 2 forks.
  6. Divide between 6 rolls. Add 1/4 cup of coleslaw and enjoy.

Notes

  1. If sauce is watery after cooking, boil down in a small pot on the stove.
  2. To skim off fat let cool in the fridge first.
