Eggs Poblano

Ingredients

  • 2 poblano peppers
  • 2 large eggs
  • 2 slices smoked ham, diced
  • 1/4 cup shredded cheddar cheese
  • Salt & pepper
  • Tabasco or similar hot sauce (optional)
  • Minced parsley for garnish

Instructions

  1. In a medium skillet, add 1/4 cup of water. Heat on medium. Slice peppers in half lengthwise, leaving the stem on. Remove seeds, keep the deeper halves of each pepper intact for filling and dice the remaining halves. Add to the skillet, cover, and steam for about 5 minutes.
  2. Remove from heat, drain any excess water.
  3. Add about 3/4 of the ham and cheese to each poblano half. Crack an egg into a glass and pour into a poblano half. Repeat for second poblano half. Top with remaining ham and cheese, diced poblano, and season with salt & pepper. Add a dash of Tabasco/ hot sauce if desired.
  4. Add another 1/4 to 1/2 cup of water to the skillet. Add the peppers, cover and heat on medium, steaming for 6 minutes for soft yolks, longer for firmer. Garnish with minced parsley.
