Chicken Marsala Meatballs

Ingredients

  • 1 lb ground chicken
  • 1/3 cup bread crumbs
  • 1/4 cup grated Pecorino cheese
  • 1 large egg, beaten
  • 1 tsp garlic cloves, minced
  • 1 Tbsp chopped fresh parsley, plus more for garnish
  • 1 tsp salt
  • 1 Tbsp all-purpose flour
  • 1 Tbsp unsalted butter
  • 1/4 cup finely chopped shallots
  • 4 oz sliced cremini mushrooms, sliced
  • 1/3 cup Marsala wine
  • 3/4 cup beef broth

Instructions

  1. Preheat the oven to 400F.
  2. In a medium bowl mix the ground chicken, breadcrumbs, Pecorino, egg, garlic, parsley, and salt.
  3. Shape into 20 small meatballs, bake 15 to 18 minutes, until golden.
  4. In a small bowl whisk the flour with the Marsala wine and broth.
  5. Heat a large skillet on medium heat.
  6. Add the butter and shallots and cook until soft and golden, about 2 minutes.
  7. Add the mushrooms and cook, stirring occasionally, until golden, about 5 minutes.
  8. Return the meatballs to the pot, pour the Marsala wine mixture over the meatballs, whisk until combined, cover and cook 10 minutes.
  9. Garnish with parsley.
