Blueberry & Red Bell Pepper Salsa

  • 4 cups fresh blueberries
  • 1/4 cup fresh cilantro, chopped
  • 2 jalapeños, minced
  • 1/2 red onion, minced
  • 2 red bell peppers, diced
  • 1/2 tsp. salt
  • 1/2 lemon, juiced
  • 1/2 lime, juiced

Using a cutting board roughly cut the blueberries. You will see some of the berries end up whole while others will be chopped. This will give you a nice mixture of both for the salsa. Place the blueberries in a large bowl. Add cilantro, jalapeños, red onion, red bell pepper, salt, lime and lemon juice. Stir to combine. Refrigerate at least one hour before serving.
