Creamy Pepperoncini Chicken Skillet

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup sliced pepperoncini peppers
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with Italian seasoning, salt and pepper, then add them to the skillet.
  3. Cook chicken until golden brown on both sides, about 5 minutes per side. Remove chicken from skillet and set aside.
  4. In the same skillet, add sliced onions and minced garlic. Cook until onions are soft and translucent, about 3 minutes.
  5. Add sliced pepperoncini peppers to the skillet and cook for an additional 2 minutes.
  6. Pour chicken broth into the skillet, scraping up any browned bits from the bottom of the pan.
  7. Stir in heavy cream and parmesan and bring mixture to a simmer.
  8. Return chicken breasts to the skillet and simmer until chicken is cooked through and sauce has thickened, about 10 minutes.
  9. Garnish with chopped parsley before serving.
