Heirloom Tomato Flatbread

  • 1 Delicious Orchards Pizza Dough
  • 1 1/2 containers of heirloom grape tomatoes – sliced
  • 2 tsp oil
  • 2 tsp fresh chopped Garlic
  • 1/2 tsp onion powder
  • 1/2 tsp fresh chopped thyme
  • 1/4 tsp kosher salt
  • 1/4 cup Shredded Asiago Cheese
  • Pesto
  • Extra oil for Bread

Preheat oven to 350 degrees.

Start by defrosting your pizza dough in the refrigerator. Once thawed, take the pizza dough and roll it out into a rectangle shape roughly 6” X 13”. Place on a baking sheet lined with parchment paper and take a fork and poke holes all over the dough (to release air so no bubbles form during baking). Spread a thin layer of oil on the top of the dough and place in oven. Cook for about 10 minutes or until it is
slightly starting to brown and then remove from the oven. Once cool, spread a thin layer of pesto on the top of the bread. Set aside.

In a medium bowl mix the sliced tomatoes with oil, garlic, onion powder, thyme and salt. Take the tomato mixture and spread evenly on top of the partially cooked pizza dough and pesto. Now take the Asiago and sprinkle on top of the tomato mixture. Add more if desired. Place back in the oven to
cook for another 10-15 minutes or until the tomatoes start to wilt slightly and the edges of the dough are golden brown. Remove from the oven and spread pesto on top and serve.
