Jack-O-Lantern Stuffed Peppers

  • 8 oz. spaghetti
  • 4 orange bell peppers
  • 1 pumpkin carver

Raw Sauce:

  • 1 large hot house tomato
  • 1/2 cup sun dried tomatoes (soaked in hot water for 10 min.)
  • 1/2 red pepper
  • 1/4 red onion
  • 1/4 cup fresh basil leaves
  • 2 TBS sunflower seeds, soaked for a couple of hours
  • 2 tsp. extra-virgin olive oil and a little more to drizzle
  • 1 1/2 tsp. soy sauce
  • 1 1/2 tsp. balsamic vinegar
  • 1 clove garlic
  • 1/4 tsp. sea salt
  • Ground black pepper, to taste

Cook spaghetti according to package directions and place in a bowl. To keep cooked spaghetti from sticking, drizzle with a little extra-virgin olive oil, stir to coat and set aside. Cut a round section off the top of each pepper, keeping the stem on and set aside. Discard the seeds and remove the insides. Using the pumpkin carver, carefully carve the jack-o-lantern face on each pepper and set aside. To prepare sauce, add all ingredients to the bowl of a food processor. Then, process for 1 minute or until smooth. Pour mixture of spaghetti and stir to coat. Put spaghetti in each prepared pepper pulling strands of pasta through the mouths and eyes of the jack-o-lanterns. Place cut top with stem on stuffed pepper and serve.
