Grilled Shrimp Salad with Honey Mustard Vinaigrette

Ingredients

Shrimp

  • 1 lb. Shrimp, peeled and deveined
  • 1 Tbsp chopped Parsley
  • 1 Tbsp Lemon Zest
  • 3 Tbsp Olive Oil
  • 1/2 tsp salt

Salad

  • 2 Romaine hearts, chopped
  • 2 Bell Peppers (any color), diced
  • 1 Hothouse Cucumber, diced
  • 1 cup chopped Grape Tomatoes

Vinaigrette

  • 1 Tbsp Dijon Mustard
  • 2 Tbsp White Wine Vinegar
  • 2 Tbsp Honey
  • 1/3 cup Olive Oil

Instructions

  1. Combine parsley, 3 Tbsp. olive oil, lemon zest and salt in a bowl, add shrimp and marinate for 30 minutes or more.
  2. Whisk together Dijon mustard, white wine vinegar, honey and 1/3 cup olive oil. Set dressing aside.
  3. Mix romaine, bell peppers, cucumber and tomatoes together in a salad bowl. Add dressing and toss.
  4. Grill shrimp approximately 2-3 minutes per side. Add to salad and toss lightly.
