Grilled Steak Kebabs

Ingredients

Steak Marinade

  • 1 pound filet mignon or steak of choice cut into 1 inch cubes
  • ¼ cup olive oil
  • 2 Tbsp Balsamic Vinegar
  • 2 Tbsp low sodium soy sauce
  • 2 Tbsp Worcestershire sauce
  • 1 tsp minced garlic

Tomato Marinade

  • 1 pint grape tomatoes
  • 1 Tbsp olive oil
  • 1 tsp fresh thyme
  • ¼ tsp minced garlic
  • Salt to taste

Potatoes

  • ¾ pound baby potatoes (12 pcs)
  • 1 Tbsp olive oil
  • 4 Skewers

Instructions

  1. Preheat grill to medium heat if using wooden skewers, soak them in water.
  2. In a large bowl whisk together olive oil, soy sauce, Worcestershire sauce, balsamic vinegar and garlic.
  3. Add cubed beef and toss to coat. Cover and refrigerate 20 minutes or overnight to marinate.
  4. In another bowl add tomatoes olive oil, thyme, garlic and salt to taste. Set aside.
  5. Place the potatoes in a large pan and add enough water to cover all of the potatoes by 1 inch. Bring the water to a boil and cook potatoes until they’re barely fork-tender, about 8-10 minutes. Drain, add olive oil and set aside.
  6. Grab a skewer and start with potato, then add steak, then a tomato. Repeat two more times and end with a potato
  7. Lightly oil the grill and set the kebabs over the heat. Grill for about 5 minutes on each side, or 10 minutes total. (You don’t want to overcook the steak.)
