Ingredients
- 1 head cauliflower cut into “bite size pieces”
- 1/4 cup + 2 Tbsp olive oil
- 1 tsp minced garlic
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/3 cup plain breadcrumbs
- 1/4 cup parmesan
- 1 tsp dry parsley
Instructions
- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- Toss cauliflower with olive oil, garlic, salt, and pepper.
- Mix parmesan, breadcrumbs, and parsley. Coat the cauliflower with the mixture.
- Roast for 15-20 minutes or until golden brown.
