Roasted Parmesan Cauliflower

Ingredients

  • 1 head cauliflower cut into “bite size pieces”
  • 1/4 cup + 2 Tbsp olive oil
  • 1 tsp minced garlic
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup plain breadcrumbs
  • 1/4 cup parmesan
  • 1 tsp dry parsley

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Toss cauliflower with olive oil, garlic, salt, and pepper.
  3. Mix parmesan, breadcrumbs, and parsley. Coat the cauliflower with the mixture.
  4. Roast for 15-20 minutes or until golden brown.
