Cod with Lemon and Garlic

  • 1.5 lb. (5-6 pieces) cod fillet
  • 5 garlic cloves, peeled and minced
  • 1/4 cup fresh parsley, chopped

LEMON JUICE

  • 5 TBS juice from fresh lemons
  • 5 TBS extra virgin olive oil
  • 2 TBS butter, melted

FOR THE COATING

  • 1/3 cup flour
  • 1 tsp. ground coriander
  • 3/4 tsp. Spanish paprika (sweet)
  • 3/4 tsp. ground cumin
  • 3/4 tsp. salt
  • 1/2 tsp. freshly ground black pepper

Preheat oven to 400 degrees.

In a shallow bowl, mix lemon juice, olive oil, and melted butter. Set aside.

In a separate bowl, mix the flour, spices, salt, and pepper. Set aside.

Using a paper towel, pat fish fillets dry. Dip fish in the lemon juice mixture then coat both sides of fillet with the flour mixture, shaking off any excess flour. Save the lemon juice mixture for later use.

In a skillet, over medium to high heat, heat 2 TBS extra virgin olive oil. Add fish and sear on each side, about 2 minutes. Do not fully cook. Remove from heat.

Add the minced garlic to the remaining lemon juice mixture and stir to combine. Drizzle the mixture over the fish fillets, place on a baking sheet and place in preheated oven.

Bake until fillets flake easily with a fork, between 5-10 minutes, depending on your oven. Remove from heat and sprinkle with chopped fresh parsley.
