Fresh Peach Salad with Creamy Ginger Dressing


  • 4 cups sliced fresh peaches
  • 2 TBS sugar
  • 2 TBS rum
  • 2 TBS fresh lime juice
  • 1/2 cup vanilla low fat yogurt
  • tsp. fresh minced ginger
  • 2 cups fresh raspberries
  • 20 spinach leaves


Combine first four ingredients in a medium bowl; stir gently, cover and chill two hours. Then, drain mixture, reserving two tablespoons of marinade. In a blender, combine one cup peach mixture, the reserved marinade, yogurt and ginger. Blend until smooth. Place spinach on a plate, top evenly with remaining peach mixture and rasperries. Serve immediately.
