Mexican Coleslaw

Ingredients

  • 3/4 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tsp honey
  • 1/4 cup freshly squeezed lime juice
  • 1 14 oz. package of coleslaw mix
  • 1/2 red bell pepper finely diced
  • 1 13.75 oz. can of black beans, properly rinsed and drained
  • 3/4 cup of shucked fresh corn
  • 1/3 cup freshly minced cilantro
  • 1 jalapeño, seeds removed and minced

Taco seasoning

  • 1 Tbsp chili powder
  • 1 1/2 tsps ground cumin
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp ground paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp dried oregano

Instructions

  1. In a medium size bowl combine taco seasoning ingredients and mix.
  2. Next, add to the taco seasoning, mayo, sour cream, lime juice and honey. Whisk until a smooth consistency. Cover and keep refrigerated until ready to use.
  3. In a separate, larger bowl, add the coleslaw mix, diced red pepper, drained black beans, corn, minced cilantro, and minced jalapeño.
  4. Take the prepared dressing from the refrigerator. Gradually incorporate it into the salad mixture, until desired consistency. Serve and enjoy!
