Grilled Lamb Chops and Fennel W/ Tzatziki Sauce

Ingredients

Tzatziki Sauce

  • 1/2 cup finely grated cucumber
  • 1 cup thick whole milk Greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 tablespoon extra-virgin olive oil
  • 1 garlic clove, grated
  • 1/4 teaspoon sea salt
  • 1 tablespoon chopped dill
  • 1 tablespoon chopped mint, optional

Grilled Fennel

  • 1 bulb fennel, frond and stems removed
  • 1 Tbsp Olive Oil
  • Salt & Pepper to taste

Lamb Chops

  • 4 4-ounce Lamb Chops
  • Olive oil
  • Salt & pepper to taste

Instructions

Tzatziki

  1. Place the cucumber on a towel and gently squeeze out a bit of the excess water.
  2. In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill, and mint, if using. Chill until ready to use.

Grilled Fennel

  1. Cut fennel in half, remove bottom and core. Cut into ½ inch slices.
  2. Toss in olive oil & season with salt and pepper
  3. Grill until soft & the edges are slightly charred

Lamb Chops

  1. Heat grill to med-high and lightly oil grates.
  2. Season lamb chops with salt & pepper to taste. Grill for 3-4 minutes per side until internal temperature reads 145°.
