Olive Bruschetta

Ingredients

  • 3/4 cup Kalamata Olives
  • 2 Tbsp. diced Roasted Red Peppers
  • 1 Tbsp. minced shallot
  • 1 1/2 tsp capers
  • 1 clove garlic minced
  • 1 Tbsp. Red Wine Vinegar
  • 1 tsp oregano
  • 2 fresh basil leaves
  • 1/3 cup olive oil

 

  • 1 baguette sliced 1/4 inch pieces
  • 1 garlic clove halved
  • 2 Tbsp. finely diced feta cheese

Instructions?

  1. In food processor, add first 9 ingredients – give a few pulses until olives are finely chopped but still chunky.
  2. Toast the baguette slices in the oven, rub each piece of bread with the halved garlic clove and top with 1 Tbsp of bruschetta. Garnish with feta cheese and half a green olive.
