Zucchini and Cheese Bake


  • 8 medium zucchini, thinly sliced
  • 1 large garlic clove
  • 3 TBS olive oil
  • 2 TBS butter
  • 3/4 cup grated parmigiano cheese
  • Dash of fresh basil
  • Salt and pepper to taste
  • Chopped parsley
  • Chopped chives


In a large skillet, brown garlic in olive oil and butter. Discard the garlic and toss zucchini in the oil mixture. Add grated cheese, basil and toss. Season with salt and pepper. Transfer to a shallow baking dish and sprinkle with additional grated cheese. Cover the dish and bake at 350 degrees for about 10 minutes or until the zucchini is fork-tender. Garnish with parsley and chives.
