- 6 TBS hulled pistachios, finely chopped
- 1⁄4 cup flour
- 2 egg whites, beaten
- 4 (4 oz.) salmon fillets
- Cooking spray
Preheat oven to 400 degrees. In a shallow dish, add egg whites. Dip one side of the salmon in egg whites and then press into pistachio mixture. Place fillets nut side up on a nonstick baking dish. Repeat for remaining three fillets. Spray top of fillets with cooking spray or brush with olive oil. Bake for 25 minutes.
